What We Offer

Raw Bar Service

A classic, chef‑led raw bar featuring premium Maine oysters shucked to order, plus optional shrimp cocktail. Includes 1.5–2 hours of service, all sauces, lemons, and everything you need to absolutely crush these oysters.  Minimums apply.

Interactive Shucking Lessons

A fun, hands‑on group experience with plenty of oysters, shucking knives, and protective gloves. Perfect for groups who want to learn, laugh, and get a little competitive.

Meet Adam

Adam Lemanski is the owner and operator of Tide + Timber Raw Bar, a fully mobile in‑home oyster experience serving Maine’s coastal communities. With more than thirteen years in the state’s seafood and hospitality industry, Adam brings a rare blend of restaurant‑level precision, farm‑level knowledge, and engaging guest interaction to every event.

His career includes high‑volume shucking and raw‑bar service with Eventide Oyster Co., Big Tree Catering, and Wine Wise Oyster Sails, along with hands‑on oyster farming at Muscongus Bay Aquaculture, Dodge Cove Oyster Farm, and as manager at Nonesuch Oyster Farm. Years spent cultivating oysters instilled a deep respect for Maine’s marine ecosystems and a commitment to sustainable sourcing—principles that guide Tide + Timber’s mission today.

Adam’s approach blends culinary skill, live performance, and educational storytelling, creating an elevated, memorable experience for guests across weddings, corporate retreats, private celebrations, and luxury vacation stays.

Adam did a fantastic job; he showed up plenty early for setup and was all ready to go when our five o’clock start time came around. There was never a wait for an oyster, while at the same time, there were no more than ten or so at a time on ice. He shucked 300 that night and was all tidied up and gone by about 8:00 without a trace. If you are in need of an oyster shucker, Adam is your man. He comes with everything he needs and leaves with everything he came with. Tidy, efficient, cordial, welcoming. I know these are adjectives for a good host. That’s what Tide + Timber is like, though. It’s like having a host in your house.”
